Cranberry Sage Gin Fizz

½ cup sugar

½ cup water

½ cup fresh or frozen cranberries

50 ml lime juice

1 lime cut into wedges

100 ml Dry Gin

1 Ginger Beer

2 tbsp Biomadica Organic Sage Flower Water + extra to spray the glass

Fresh cranberries to garnish (optional)

Cranberry Sage Gin Fizz

Prepare a simple syrup by combining water and sugar in a small saucepan and bringing to boil. Gently simmer until sugar dissolves.

Keep ½ cup and the rest store in the fridge for later use.

Return the ½ cup of simple syrup into the saucepan and back on medium heat. Add in the cranberries and gently simmer for a couple of minutes until they start to burst and soften. Remove from heat, mush the cranberries and allow to cool down completely. Strain using a fine sieve.

Cranberry Sage Gin Fizz

Fill 2 glasses with ice. Spray them with the sage water.

In a large shaker (or a pitcher) combine ice, cranberry syrup, gin, lime juice and the sage water. Shake well and pour halfway up the glasses. Top up each glass with ginger beer, add in 1-2 lime wedges into each drink and decorate with cranberries.
